So i made these simple yet very delicious pancakes, so i thought of sharing the recipe with all. I learnt them from a show on TLC. Take an egg in a bowl and add half a cup of milk, pinch each of thyme, garlic powder, rosemary , salt and pepper. Beat well and then add a tablespoon of corn flour and beat more. Now separately boil potatoes, i medium size for one adult, to make two pancakes. Let them cool and then mash them with a fork. Add to the egg mixture and also add a small cup of diced spring onions. Please do not replace it by our red onions, as this will turn into bland aloo tikkis then. Now the batter needs to be thick yet a little flowing. So add milk accordingly. Now let it rest for 15 to 20 mins. Now on a non-stick pan, add a little oil and then butter. Take a serving spoons and put dollops of the mixture on the pan. Check if one side has turned golden and then turn. Keep pressing lightly so that it is cooked thoroughly.Cook on medium heat. Serve immediately, or else keep in a preheated oven till you serve. Goes very well with au gratin and soup or pot roast. Do try..
